Egg in the Hole or Egg on Toast?

A fun and easy April Fool’s breakfast surprise this easter Sunday! Recipe via Cookpad

Prep Time: 5 minutes
Bake Time: 5 minutes
Serves: 4


  • 4 slice pound cake
  • 4 canned apricot halves
  • 6 oz vanilla yogurt 



  • 2/3 cup confectioners sugar
  • milk or cream to thin


  1. Using small cookie cutter, remove center of each slice of pound cake.
  2. Toast slices and centers in saute pan that has been sprayed with cooking spray.
  3. When golden, arrange slices on plates with yogurt and apricot halves to look like eggs.
